Oven-baked avocado with eggs

Ingredients

  • 2 Avocados
  • 4 eggs
  • Salt and black pepper, to taste
  • Chives or other fresh herb, to taste

Method

Preheat the oven to 200ºC.

Halve the avocado and remove the stone. Increase the dent in each half by removing 1-2 tablespoons of flesh.

Place the avocados skin down on a greased baking tray. Gently break an egg into each dent. Season with salt and pepper, to taste.

Bake in the oven until the whites are cooked through and the yolks reach your preferred consistency: approx. 15-20 min.

Serve immediately and sprinkle with chopped fresh herbs, to taste.
